Franklin Bailey known as Ras Bingi of Bingi’s BBQ started with a food vending business, doing catering and events in and around Prince Edward County back 2015. Cooking was a hobby turned into a small business that has been pleasing taste buds ever since.

You will notice his ‘Big Smoke’ smoker at his roadside BBQ located at 1107 East Lake Rd (Country Rd 11) on the way to the Sandbanks Provincial Park at the popular Tambo convenient store.

BBQ Back Ribs

The first thing I noticed was the smell of a real wood fire when I pull into the parking lot. I found out that the same smell is actually Apple Wood and its smoked right into the ribs, giving them a smokey sweet taste that I found just amazing.

Apple wood is great choice to cook with as it does leave mild and sweet flavor incorporated into the smoked ribs or other other heavier BBQ meats. Most people choose it for BBQ pork and poultry. BBQ ham is almost always done with apple wood.

When I got home I covered the ribs in my favorite BBQ sauce but you can ask about his very own “Hot Sauces”. There are special hot sauces he can recommend that will enhance everything about your experience.

BBQ Chicken

I’ve heard nothing but great things about the Jerk chicken. I’m not a spicy eater, I’m actually a wimp that way but those who have had it say it great.

I prefer Bingi’s regular BBQ chicken. It looks spicy but its not. It was so tender and juicy as he was cutting we were both “Ohhhinh and Ahhhing” to the tenderness of the chicken. The smoke cooked right into the chicken and I was blown away at how good it was.

I would certainly recommend Bingi’s BBQ Catering in Prince Edward County! If your out at West Lake stop in the Tambo convenience store and pick up some freshly cooked smoked BBQ.
